Karier Mitchell sebagai produser berawal pada pertengahan 1980-an sebagai anggota rumah produksi Kennedy Miller di Sydney, Australia. Pada akhir 1980-an, ia bersama George Miller dan Terry Hayes mendapat nominasi kategori AACTA Award for Best Film pada penganugerahan Australian Film Institute Awards. Mereka memenangi kategori Best Film untuk film The Year My Voice Broke pada tahun 1987, mendapat nominasi untuk Dead Calm tahun 1989, dan memenangi kategori Best Film untuk Flirting tahun 1990.
Pada tahun 1996, Mitchell mendapat nominasi Academy Award bersama George Miller dan adiknya, Bill Miller kategori Academy Award for Best Picture untuk film Babe.
